Joseph Hawkins was from West Windsor, New Jersey. A gridiron is a wrought iron utensil used for broiling food. Meat was placed between the parallel metal bars of the gridiron and then placed in fire or inside an oven. Joseph Hawkins' gridiron included a trough to catch the fats and liquids that dripped from the meat while cooking for purposes of gravy making and preventing smoke.
